椰汁糯米糕
椰汁糯米糕(Kue Wajik)是印尼傳統糕點,
把蒸熟的糯米加入椰糖、椰漿和班蘭葉煮成的汁,

攪勻所有材料,冷卻後便可享用的糕點。
很易做,所以廚房媽經常都會做給我們當早餐,
但班蘭葉不常買到,所以廚房媽省略了,
但一樣好吃,因為廚房媽用了椰漿來浸糯米,
可想而知椰味更香濃。

做這糕沒什麼要注意的地方,
但這糕通常會切成菱形,
因為印尼文「Wajik」有鑽石形或菱形意思,
而「Kue」則是糕,所以就是菱形的糕點~😊
材料
糯米🔸400 g
椰漿(椰奶)🔸500 ml
片糖 / 椰糖 / 黑糖🔸140 g
椰子油 / 菜油🔸1 湯匙
鹽🔸適量
做法
1. 糯米洗淨瀝去水份,加入400ml椰漿浸3-4小時;
2. 糯米浸好後,加入剩下的100ml椰漿蒸50分鐘;
3. 平底鑊放椰子油,小火熱油,然後放入片糖;
4. 煮至片糖完全溶化後,加一小撮鹽拌勻,再放入蒸好的糯米攪拌均勻;
5. 模具薄薄塗一層油,放入椰汁糯米,壓緊一點,待冷卻後便可切開享用,Enjoy~
*吃不完的糕可以放雪櫃,要吃時拿出來蒸熱便可。

Glutinous rice 400 g
Coconut milk 500 ml
Brown sugar / Coconut sugar 140 g
Coconut oil / Oil 1 tbsp

Method
1. Rinse and drain the glutinous rice, then soak in 400 ml coconut milk for 3-4 hrs.
2. Add 100 ml coconut milk to steam for 50 mins.
3. In a pan, turn to low heat to heat up coconut oil, add sugar.
4. When the sugar is melted, add pinch of salt, put steamed glutinous rice in, mix well.
5. Lightly spread some oil on the mould, put the rice in, press it tight. When it's cold, take out from the mould and cut to serve.
*Put in the fridge if it's left, heat it up again before serve.
