炸薯仔肉餅
材料(12-14 粒)
馬鈴薯 ⋯⋯ 2 個(~500 g)
豬肉碎 ⋯⋯ 180 g
葱 ⋯⋯⋯⋯ 50 g
紅葱頭 ⋯⋯ 12 粒
雞蛋 ⋯⋯⋯ 1 隻(分開蛋黃蛋白)
鹽 ⋯⋯⋯⋯ 1/2 茶匙
糖 ⋯⋯⋯⋯ 1/4 茶匙
胡椒粉 ⋯⋯ 1/2 茶匙
做法
1. 馬鈴薯切塊,中大火熱油,油溫夠熱後,放入馬鈴薯,轉中火炸約10分鐘;2. 炸好的馬鈴薯放上廚房紙瀝乾,放涼後搗碎;
3. 紅葱頭切粒,鍋裡同時放油和紅葱頭,開中火炸至金黃,放上廚房紙瀝乾,炸過紅葱頭的油(即葱油)可保留作其他用途;
4. 葱切粒,除蛋白之外,把所有材料和調味料攪拌均勻,搓成約3cm的球,再略為壓扁;
5. 平底鑊放約1cm深的油,中火熱油;
6. 油溫夠熱後,逐個薯餅沾一層蛋白,放入鑊煎至兩面都金黃(每面約2-3分鐘),完成~
* 當你把所有薯餅放入鑊後,第一隻放的薯餅底面也差不多已金黃,所以最好記得放的次序,以便翻另一面煎。
Perkedel
Ingredients ( 12-14 pc )
Potato 2 pc(~500 g)
Minced pork 180 g
Spring onion 50 g
Shallot 12 pc
Egg 1 pc (Separate the yolk and white)
Salt 1/2 tsp
Sugar 1/4 tsp
Pepper 1/2 tsp
Method
1. Slice potato. Get a pot, turn to medium high heat, add oil. When the oil is hot enough, put potato in, turn to medium heat fry for 10 mins.
2. Use kitchen paper to soak the oil, let the potato cool down then crush it.
3. Dice shallot, add oil and shallots to the pot. Turn to medium high fry until golden brown. Drain off the oil, put on kitchen paper to soak the oil. (Keep the shallot oil for the other use)
4. Finely chop the spring onion, put all the ingredients except egg white in a mixing bowl mix it well. Roll in 3 cm, slightly press it.
5. Get a pan, add about 1cm high oil in, turn to medium heat.
6. When the oil is hot enough, coat the perkedel in an egg white, then fry until both side get golden brown ( around 2~3 mins on each side ). Done~
