香料油煎大蝦

材料

連殼大蝦 ⋯⋯⋯⋯ 8 隻
番茜(香芹) ⋯⋯ 1 小札 (切碎)
橄欖油 ⋯⋯⋯⋯⋯ 60 ml
蒜頭 ⋯⋯⋯⋯⋯⋯ 4 瓣 (切片)
丁香 ⋯⋯⋯⋯⋯⋯ 2 粒
香葉 ⋯⋯⋯⋯⋯⋯ 1 片
辣椒乾 ⋯⋯⋯⋯⋯ 2 條
鹽、胡椒 ⋯⋯⋯⋯ 適量
檸檬汁 ⋯⋯⋯⋯⋯ 適量

做法

1. 大蝦先剪開背殼,用牙簽挑出蝦腸並清洗;
2. 製作香料油,將橄欖油、蒜片、丁香、香葉和辣椒乾,連同鹽、胡椒放進小鍋中小火爆香;
3. 當蒜片開始變金黃色後關火,把油倒出,隔去香料;
4. 準備平底鍋,開大火,倒入香料油,放入大蝦每面煎約1分鐘,直至蝦身完全卷曲,代表熟透;
5. 大蝦上碟,淋上香料油,再擠點
檸檬汁,灑上番茜碎,完成~
*帶香料味的油,可以拿來沾烤香的麵包一起吃~

Pan fry prawns with flavored oil

Ingredients

Prawns  8 pc
Parsley  1 small bunch (choped)
Olive oil  60 ml
Garlic  4 clove (sliced)
Clove  2 pc
Bay leaf  1 pc
Dried chilli  2 pc
Salt, Pepper, Lemon juice

Method

1. To devein prawns, use scissors to cut the back of shell, use a tooth pick to pull off the vein and wash it.
2. To make the flavored oil, put every things without prawn in a sauce pan heat up by low heat.
3. When the garlic become lightly brown, turn the heat off and strain the oil.
4. Turn the pan to high heat. Use the flavored oil to fry the prawns. 1minute for each side. When it turn to u shape.
5. Serve prawns on plate, pour the oil on top and sprinkle with chopped parsley, serve with lemon
juice and bread.
