三色蛋蒸肉餅
材料
免治豬肉 ⋯⋯⋯ 400 g
雞蛋 ⋯⋯⋯⋯⋯ 2 隻
鹹蛋 ⋯⋯⋯⋯⋯ 1 隻
皮蛋 ⋯⋯⋯⋯⋯ 1 隻
蔥花、麻油 ⋯⋯ 適量
醃料
紹酒 ⋯⋯⋯⋯⋯ 1 茶匙
糖 ⋯⋯⋯⋯⋯⋯ 1/2 茶匙
水 ⋯⋯⋯⋯⋯⋯ 2 茶匙
做法
1. 將糖、紹酒、2湯匙水、鹹蛋白和豬肉拌勻;
2. 雞蛋打發好,皮蛋分切6-8份;
3. 將打發好的雞蛋和豬肉拌勻後,放入蒸碟,舖得薄一點,放上皮蛋和鹹蛋黃;
4. 水滾後,放入鑊蒸12分鐘,蒸好後淋上麻油和灑點葱花便可以吃了~
*鹹蛋白本身已夠鹹,所以不用加鹽作調味了。
Steamed Minced Pork with Trio Egg
Ingredients
Minced pork 400 g
Egg 2 pc
Salted egg 1 pc
Century egg 1 pc
Chopped spring onion and sesame oil
Marinade
Shaoxing wine 1 tsp
Sugar 1/2 tsp
Water 2 tsp
Method
1. Add all marinade ingredients and salted egg white into the mince.
2. Bit the eggs and cut the century egg and in 6~8 pcs.
3. Mix the egg with the pork, put on a steam plate. put century egg and salted egg yolk on top.
4. Steam for 12mins. when it's cooked, add some chopped spring onion and sesame oil on top, done.
*No need to season, because the salted egg already salty enough.
