黑白蒜南瓜蒸排骨

材料

南瓜 ⋯⋯⋯ 260 g
排骨粒 ⋯⋯ 380 g
黑蒜 ⋯⋯⋯ 2 粒(~30 g)
蒜頭 ⋯⋯⋯ 5 瓣
紅葱頭 ⋯⋯ 2 粒
薑片 ⋯⋯⋯ 2 片
葱花 ⋯⋯⋯ 適量

醃料

糖 ⋯⋯⋯⋯ 1/2 茶匙
鹽 ⋯⋯⋯⋯ 1/2 茶匙
蠔油 ⋯⋯⋯ 1/2 湯匙
生粉 ⋯⋯⋯ 2 茶匙

做法

1. 排骨粒洗淨抹乾,將一粒黑蒜壓成蓉再和排骨拌勻,然後加入糖、鹽、蠔油及生粉拌勻,備用;
2. 南瓜去籽去瓤洗淨,刨皮切塊;
3. 蒜頭、紅葱頭、薑片和一粒黑蒜,全部去皮切粒,熱油爆香備用;
4. 蒸盤上將南瓜塊鋪底,再放上排骨粒,然後淋上爆香的蒜蓉黑蒜;
5. 大火蒸13-15分鐘,蒸好後將南瓜和排骨拌勻,灑上葱花,完成~

Ingredients

Pumpkin  260 g
Spare Rib  380 g
Black garlic  2 pc(~30 g)
Garlic  5 clove
Shallot  2 pc
Sliced ginger  2 pc
Chopped Spring onion

Marinade

Sugar  1/2 tsp
Salt  1/2 tsp
Oyster sauce  1/2 tbsp
Potato Starch  2 tsp

Method

1. Wash the rib, add all marinade ingredients and 1 clove of black garlic to marinate.
2. Peel the pumpkin, take out the seed, cut in small piece.
3. Peel and chop the garlic, shallot, ginger and 1clove of black garlic. Fry in a pan until aromatic, put on side.
4. In a steam tray, put pumpkin on bottom, ribs on the top, then pour the step 3 ingredients on top.
5. Steam for 13~15mins by high heat. Stir it well when it's cooked, sprinkle with spring onion. Done~
