芋頭椰漿燴鯧魚

材料

鯧魚 ⋯⋯⋯⋯ 1 條(325 g)
洋葱 ⋯⋯⋯⋯ 1/2 個
甘筍 ⋯⋯⋯⋯ 1/2 條
芋頭 ⋯⋯⋯⋯ 175 g
馬鈴薯 ⋯⋯⋯ 1 粒(135 g)
香茅 ⋯⋯⋯⋯ 1 條
辣椒 ⋯⋯⋯⋯ 1 條
熱水 ⋯⋯⋯⋯ 2 杯(500 ml)
椰漿 ⋯⋯⋯⋯ 1 杯
250 ml)
椰青水 ⋯⋯⋯ 3 湯匙
大地魚粉 ⋯⋯ 2 茶匙

做法

1. 鯧魚洗淨,去除內臟,用廚房紙或毛巾吸乾水份,兩側各劃兩刀,並灑一小撮鹽;
2. 洋葱、甘筍、芋頭、馬鈴薯洗淨去皮,甘筍切約1cm方粒,其他切約2cm方粒,用刀把香茅尾部拍散;
3. 平底鑊下油,中大火熱油後,鯧魚下鑊(記得下鑊後不要移動魚身),轉中小火,將底面煎至金黃(約3-5分鐘),反轉另一面再煎至金黃,煎好起鑊待用;
4. 中火熱油,放入洋葱炒香後,放入甘筍粒炒至半熟,再放芋頭、馬鈴薯粒一起略炒;
5. 加入熱水、大地魚粉加蓋煮約4分鐘;
6. 轉小火,加入椰漿,煮滾後放入鯧魚,再煮8分鐘(每面4
分鐘),上碟~


Braised Pomfret with Taro in Coconut milk

Ingredients

Pomfret fish  1 pc
Onion  1/2 pc
Carrot  1/2 pc
Taro  175 g
Potato  1 pc
Lemongrass  1 pc
Chilli  1 pc
Water  2 cup(500 ml)
Coconut milk  1 cup / 250 ml
Coconut water  3 tbsp
Dried Flounder powder  2 tsp

Method

1. Wash the fish, take out the offal. Use kitchen paper to soak the water. Make shallow cuts on the surface of the fish. Add some salt on both side.
2. Rinse and peel the onion, carrot, taro and potato. Cut carrot in 1 cm cube, cut the rest in 2 cm cube, use the knife blade to crush the lemongrass.
3. In a pan, add oil turn to turn to medium high heat. When it's hot enough, put the fish on, turn to medium low heat cook for 3-5 mins. When it become golden brown, turn to other side cook until golden brown. take out from the
pan.
4. In the same pan, add oil, put onion to stir fry. Add carrot fry until half cooked, add taro and potato.
5. Add water and flounder powder, cover with lid cook for 4 mins.
6. Turn to low heat, add coconut milk, when it's boil, put the fish in, cook each side for 4 mins. Done~
