台式滷肉飯+滷肉飯糰

材料(二人份量)

五花腩 ⋯⋯⋯⋯ 350 g
紅葱頭 ⋯⋯⋯⋯ 3 顆
蒜頭 ⋯⋯⋯⋯⋯ 2 顆
水煮蛋 ⋯⋯⋯⋯ 2 隻

滷汁

米酒 ⋯⋯⋯⋯⋯ 120 ml
生抽 ⋯⋯⋯⋯⋯ 3 湯匙
老抽 ⋯⋯⋯⋯⋯ 1 湯匙
冰糖 ⋯⋯⋯⋯⋯ 25 g
水 ⋯⋯⋯⋯⋯⋯ 240 ml
白胡椒粉 ⋯⋯⋯ 1/2 茶匙
花椒 ⋯⋯⋯⋯⋯ 1 茶匙
八角 ⋯⋯⋯⋯⋯ 2 粒
肉桂 ⋯⋯⋯⋯⋯ 1 條
丁香 ⋯⋯⋯⋯⋯ 2 粒
沒有花椒、八角、肉桂、丁香這些香料,可直接放一茶匙五香粉

做法

1. 帶皮五花腩切小塊,紅葱頭切片,蒜頭切粒;
2. 燒熱鑊後下油,炒五花腩數分鐘再下蒜蓉、紅葱頭爆香;
3. 加入米酒、生抽、老抽、冰糖、白胡椒粉和所有香料;
4. 加水,放入水煮蛋,用中火煮沸,然後加蓋轉小火再煮30分鐘(有時間的話,炆煮1小時左右會更入味),完成~

滷肉飯糰做法

1. 白鑊炒香芝麻;
2. 保鮮紙上放上米飯,再放點滷肉做餡,包裹好再沾上芝麻便成為滷肉飯糰~
・包飯糰時,滷肉不要沾到太多汁,否則飯糰很容易散開

Taiwanese Braised Pork Rice (Lu Rou Fan) + Rice ball

Ingredients (Serving for two)

Pork belly  350 g
Shallots  3 pc
Garlic  2 clove
Boiled eggs  2 pc

Soy sauce Brine

Rice wine  120 ml
Soy sauce  3 tbsp
Dark soy sauce  1 tbsp
Rock sugar  25 g
Water  240 ml

White pepper  1/2 tsp
Sichuan pepper  1 tsp
Star anise  2 pc
Cinnamon  1 pc
Clove  2 pc
* Can use five spice powder instead of Sichuan pepper, star anise, cinnamon and clove.

Method

1. Slice pork belly, cut in small peace. Slice shallot, chop garlic.
2. In a hot pot or wok. Fry the pork belly until golden brown, add shallot and garlic until aromatic.
3. Add rice wine, soy sauce, dark soy sauce, rock sugar and the spices.
4. Add water, boil egg, Cook in medium heat, bring it to boil then turn to slow heat braise for 30 mins (You will get better taste if you braise for 30 mins longer). Done~

Rice ball Method

1. Toast sesame seed.
2. Put rice on cling film. Add braised pork without sauce on it. Wrap it and make a ball shape, coating with sesame seed, done~
