西班牙辣茄醬配馬鈴薯
材料
新薯 ⋯⋯⋯⋯⋯⋯⋯⋯⋯ 200 g罐裝番茄(切碎) ⋯⋯⋯ 1 罐
洋葱 ⋯⋯⋯⋯⋯⋯⋯⋯⋯ 1 個
蒜頭 ⋯⋯⋯⋯⋯⋯⋯⋯⋯ 4 顆
辣椒 ⋯⋯⋯⋯⋯⋯⋯⋯⋯ 2-3條(可隨個人喜好加減辣度)
孜然粉 / 小茴香粉 ⋯⋯⋯ 5 g
白酒 ⋯⋯⋯⋯⋯⋯⋯⋯⋯ 20 ml
蛋黃醬 / 美乃滋 ⋯⋯⋯⋯ 20 g
油 ⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯ 300 ml
鹽、胡椒、糖 ⋯⋯⋯⋯⋯ 適量
做法
1. 洗淨馬鈴薯皮,不需刨皮,準備一煲水將其煮至熟透,放涼至手能觸摸程度;2. 洋葱切絲,蒜頭切碎;
3. 炒香洋葱至微黃,下蒜頭再炒約1分鐘;
4. 加孜然粉,辣椒再炒約30秒;
5. 加白酒,煮至半蒸發;
6. 放入番茄,繼續煮至收水成醬,加鹽、胡椒、糖作調味;
7. 煮茄醬同時,準備一鍋炸油,加熱至180℃(中大火熱油);
8. 用手稍為將馬鈴薯壓碎,然後下鍋炸至金黃色;
9. 上碟,辣茄醬鋪面,加上蛋黃醬,完成~
Patatas Bravas
Ingredients
New potato 200 gChopped tomato 1 tin
Onion 1 pc
Garlic 4 clove
Chilly 2~3 pc
Cumin powder 5 g
White wine 20 ml
Mayonnaise 20 g
Oil 300 ml
Salt, pepper and sugar
Method
1. Wash the potato, do not peel the skin. Boil in the water until cook. Cool down until you can touch by hand2. Slice onion, chop garlic.
3. In a pot, Sauté the onion till lightly brown, then add garlic cook for 1 min.
4. Add cumin powder and chilly, sauté for 30 sec.
5. Add wine, then simmer for 30 sec.
6. Add tomato, then simmer until the sauce become thick. Seasoning with Salt pepper sugar.
7. In the mean time. Get an other pot. Add oil, heat up to 180℃ (Turn to medium high heat).
8. Use hand to squeeze potato. Fry it until golden brown.
9. Get ready your plate. Put the potato on, sauce on it, mayonnaise on top. Enjoy~
